The results showed that the additional addition of Rimbang juice (p <0.01) increased antioxidant activity and had a positive effect on moisture content, ash, fat, protein, crude fiber, coarse carbohydrates, vitamin C content, total microbes, hedonic color values, color index, as well as decreased blood cholesterol levels of mice. However, there is no significant effect (P> 0.05) on the pH, aroma, taste, and texture of the product.
